Popcorn Chicken Salad Lunchbox
If you want to level up your chicken game, these chicken recipes are just for you! These recipes are a perfect lunchbox idea instead of eating the same meal every day. For this one, we’ll be making not one, not two, but THREE delicious popcorn chicken salad recipes. If you’re ready to prepare some scrumptious salad recipes, put on your apron and we’ll start by preparing the ingredients.
First, we’ll be making popcorn chicken. If you’re vegan and you don’t prefer chicken, you can swap out the chicken with some roasted tempeh or roasted cauliflower. Let’s start by cutting our chicken breast into one-inch bite-sized pieces. Season some panko bread crumbs with salt and pepper, then dredge your chicken in almond flour, egg, and the panko. Place your chicken on a baking rack and lightly spray them with olive oil to get that golden brown color. Bake in the oven for twelve to fifteen minutes until cooked through.
BUFFALO POPCORN CHICKEN SALAD
For the buffalo dressing, mix in Greek yogurt, hot sauce, apple cider vinegar, olive oil, garlic, and chives together. In a meal prep container, assemble your salad with sliced radish, shredded carrots, chopped celery, diced tomato, chopped green lettuce, and popcorn chicken. Top it off with the buffalo dressing and enjoy!
TERIYAKI POPCORN CHICKEN SALAD
To assemble the salad, put in your chopped lettuce, diced tomato, shredded purple cabbage, mandarin oranges, diced or chopped cucumber in a meal prep container. For the dressing, mix in rice vinegar and teriyaki sauce. For this recipe, I used Anne Chung’s gluten-free teriyaki sauce. Pour in your dressing in the salad and enjoy your popcorn chicken salad recipe!
HAWAIIAN POPCORN CHICKEN SALAD
In a meal prep container, assemble chopped green lettuce, diced tomato, diced cucumber, diced pineapple, diced or chopped bell peppers, diced avocado, and popcorn chicken. Top off your chicken salad with low-calorie balsamic vinaigrette dressing.
POPCORN CHICKEN
Ingredients for 6 servings
- 1 1/2 lb raw chicken breasts, cut into 1-inch chunks
- Batter
- 1/3 cup fine almond flour
- 1 cup panko crumbs
- an egg, lightly beaten
Steps
Step 1
Set oven to 420F/216C.
Step 2
Add a pinch of sea salt and pepper to the panko crumbs and mix it up.
Step 3
After the chicken is chopped into small pieces, dip the chicken piece in the almond flour, then the egg, then the panko.
Step 4
Place the chicken on a baking tray (or baking rack). Lightly spray them with olive oil to help them brown in the oven. Bake for 12 to 15 minutes, or until golden brown and cooked through.
Buffalo Popcorn Chicken Salad
Ingredients for 1 serving
- 1 serving popcorn chicken
- 1 1/2 cups chopped green lettuce
- 1/4 cup chopped celery
- 1 Roma tomato, diced
- 1/4 cup shredded carrots
- 1 small radish, sliced
- 1 serving quick Buffalo style dressing (see below)
Buffalo Dressing (makes 3 servings)
68 calories, 4g protein, 1g carbohydrates, 5g fat, 0g fiber, 2g sugar
- 4oz 2% Greek yogurt
- 2 tablespoons hot sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon olive oil
- pepper to taste
- 1 teaspoon garlic powder
- Garnish – dried chives

Teriyaki Popcorn Chicken Salad
Ingredients for 1 serving
- 1 serving popcorn chicken
- 1 1/2 cups chopped green lettuce
- 1/3 cup shredded (purple) cabbage
- 1 Roma tomato, diced
- 1 cup (113g) mandarin oranges – NO sugar added
- 1/4 cup cucumber, diced or chopped
- Dressing
- 1 1/2 tablespoons teriyaki sauce (I used Anne Chung’s gluten-free sauce)
- 1 tablespoon rice vinegar

Hawaiian Popcorn Chicken Salad
Ingredients for 1 serving
- 1 serving popcorn chicken
- 1 1/2 cups chopped green lettuce
- 1/4 cup cucumber, diced
- 1 Roma tomato, diced
- 1/3 cup pineapple, diced
- 1/3 cup bell pepper, diced or chopped
- 1/4 cup avocado, diced
- 2 tablespoon low-calorie balsamic vinaigrette (I used balsamic dressing with no oil)
