Baked Avocado with Grilled Shrimp & Scrambled Egg Whites

Today’s recipe is grilled shrimp, scrambled egg whites, baked egg avocado, grilled tomatoes in avocado, Ezekiel bread tortilla wrap and half pear. A low carb meal, full of protein, you can enjoy any time of the day, breakfast, lunch or dinner.

This baked avocado recipe is very simple, and you’ll need only 12 minutes to make it. Avocados in my other recipes are usually served raw, but cooked avocados are also very tasty and healthy. if you haven’t tried it yet, now’s your chance.

Make sure to preheat the oven at 405F before you start preparing the avocado. Slice the avocado in half and remove the pit. Remove a little inside with a spoon to make more space for eggs. Beat the egg in one hole of the avocado and season to taste.

Place the avocado halves in the oven and bake. After 7 minutes, check them and if the egg is baked to your liking, remove it from the oven or bake to desired readiness.

Heat the olive oil in a nonstick skillet on medium heat. Toss in the shrimps seasoned with chili and salt and cook them for about 3 minutes, or until the shrimps turn pink. Squeeze the lime juice over the shrimps and they’re ready. Grill some cherry tomatoes, and make scrambled eggs from two eggs.

Serve baked avocados on a plate with scrambled eggs, grilled shrimps and tomatoes, tortilla wraps and pear.

Baked Avocado with Grilled Shrimp & Scrambled Egg Whites

Step 1

Set oven to 405F.

Step 2

Slice an avocado in half and remove the seed.

Step 3

Carve out just a little of the filling to make a larger hole.

Step 4

Crack an egg into the whole.

Step 5

Place in oven and back for roughly 7 to 9 minutes or until egg is at desired readiness.
