Add turkey sausage to the base of a microwave-safe bowl. Lightly cover then place in the microwave to cook for 1 – 3 minutes.
As soon as the turkey finishes, chop it up with a spoon spatula into small pieces.
Add spinach immediately on top of the turkey and lightly cover so that it wilts.
In a separate bowl, beat eggs together with the remaining ingredients then pour into bowl or dish with the turkey. Add any garnish on top.
Lightly cover and cook in the microwave in increments of 3 minutes and 2 minutes until the eggs are completely cooked through. Slice and enjoy with oats or toasted sourdough!
