Mediterranean Quinoa Salad Recipe

Ingredients

  • 1 1/2 cups cooked quinoa
  • 12 cherry tomatoes, quartered
  • 2/3 cup cucumber, seeded and diced
  • 1/3 cup Kalamata olives, chopped
  • 4 tablespoons feta crumble
Optional, "even better additions"
  • 3 tablespoons red wine vinegar

Steps

Step 1

Add all ingredients to a mixing bowl and gently toss together. Season to taste with sea salt & pepper.
