Smoky Lobster (Seafood) Salad

Hey guys, today we’re making fresh summer salad with smoky lobster, very light and full of flavor. It’s actually so easy to make at home!

I was in Kroger recently grabbing a few items for meal prep and I noticed they had a sale on wild-caught lobster tails for only $6 per tail so I couldn’t pass it up! I was immediately inspired to do two things: 1) fire up the grill; 2) make a seafood salad.

I sprayed the lobster tails with a little grapeseed oil and placed them on my smoker grill set at 200F. I smoked the tails for about 2 hours, then peeled them, cleaned them (if needed), and chopped them into pieces. Here’s the rest of this amazing recipe…

The base of this salad is any seafood that you like in a salad, but my choice is now smoked lobster. Other ingredients you’ll need are Greek yogurt, safflower mayo, dijon mustard, onion, celery, fresh dill and seasonings. Mix lobster tails and with other ingredients in a large bowl with a spatula.

Chill in the fridge for 1 hour and enjoy. I actually enjoy making this salad. Very often I make double portions and store them in the fridge for the next morning and make a sandwich with this salad for breakfast.

Easy, fast and delightful! This salad can be served in so many different ways. You can eat this salad as-is. Cold summer seafood salad also goes well with gluten-free bread or with rice cakes. If you’re a pasta lover, add some cooked pasta to it and enjoy your pasta salad.

Instead of lobster, you can make this salad with crab meat if you prefer. This salad can be also made with imitation crab witch you can be found in almost every grocery store.

Smoky Lobster (Seafood) Salad

Ingredients

Ingredients for 2 servings:

  • 2 cups (3/4lb) chopped, smoked lobster tails
  • 3 tablespoons lite safflower mayo
  • 1 1/2 tablespoon 2% Greek yogurt
  • 1/4 cup chopped red onion
  • 1/3 cup chopped celery
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic (paste or minced)
  • 1/2 teaspoon cumin
  • fresh dill to taste
  • sea salt & pepper to taste

Steps

Step 1

Place all the ingredients into a bowl and mix together using a spatula.

Step 2

Chill in the refrigerator for at least 1 hour before enjoying.
